12 oz pack of Extra Firm Tofu sliced into 1 in or 1/2 inch cubes (personal preference) Marinate cubes in the Southwestern Marinade:
1 small clove garlic, minced (I use garlic in the jar or tube to save time)
1 Tbsp fresh lemon juice
1/4 tsp ground cumin
1/4 tsp salt
1/4 tsp pepper
1/4 Mexican Oregano (I use "regular" oregano because that's what I usually have on hand!)
1 Tbsp diced fresh cilantro
1/2 Tbsp olive oil
1/4 tsp chili powder
