Fueling our bodies correctly is a key component to living our dimensions! Processed foods (PFs) can get 'cha right where they want 'cha! They have a way of tasting so good and calling us back for more over and over again. Breaking the processed food cycle can be tough, especially when you're short on time. PFs are quick and easy to prepare and as a busy mom of three, I resort to them too - especially when my husband is traveling. I do my best, however to keep things as simple and as fresh and nutrient-dense as possible. Good-for-you food doesn't have to be complicated. I'll tell you what my mom tells me when I get off track - Just keep it simple!

I’ve had several people ask me about this recipe over the past few days. I prepared it in roughly 25 minutes this past week. It’s actually a terrific meal to get children involved in preparing! However, In the interest of time, or the lack there of rather, I didn’t enlist anyone’s help this go around. For the full cookbook, check out Meatless Mains.
